Description

Crispy Sesame Balls, also known as Jian Dui, are a beloved Chinese dessert with a golden, crunchy exterior coated in sesame seeds and a soft, chewy interior filled with sweet red bean paste. These deep-fried treats are delightfully addictive and perfect for festive occasions or an afternoon snack.


Ingredients

  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1/2 cup water (plus more as needed)
  • 1/3 cup sweet red bean paste (or lotus paste)
  • 1/2 cup white sesame seeds
  • Oil, for deep frying

Instructions

  1. In a mixing bowl, combine glutinous rice flour and sugar. Gradually add water while mixing until a soft, pliable dough forms. Knead until smooth. If the dough is dry, add water 1 teaspoon at a time.
  2. Divide the dough into 8 equal portions. Flatten each piece into a disc and place about 1–2 teaspoons of red bean paste in the center. Carefully seal and roll into a smooth ball.
  3. Place sesame seeds in a shallow bowl. Lightly dampen each ball with water and roll in sesame seeds to coat evenly. Press gently to help the seeds stick.
  4. Heat oil in a deep pot to 325°F (165°C). Carefully add the sesame balls, a few at a time, and fry for 6–8 minutes, gently stirring to ensure even browning. Balls should puff up and turn golden brown.
  5. Remove and drain on paper towels. Let cool slightly before serving.

  • Keep the oil temperature consistent to ensure even cooking and puffing.
  • Don’t overcrowd the pan—fry in batches.
  • Use canned or homemade red bean paste for convenience.
  • Best enjoyed fresh, but leftovers can be reheated in the oven to regain crispiness.
