- 4 flour tortillas
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 1/2 cup cooked chicken, shredded (optional)
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp olive oil or melted butter
- Salt and pepper to taste
- 1 tsp ground cumin (optional)
- 1 tsp chili powder (optional)
- 1/4 cup sour cream (for dipping, optional)
- 1/4 cup salsa (for dipping, optional)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Lay the tortillas flat on a clean surface. Sprinkle the cheese evenly over half of each tortilla, then add the shredded chicken, bell peppers, onions, and spices (if using).
- Fold each tortilla in half to form a half-moon shape, pressing gently to secure the fillings inside.
- Brush both sides of the quesadillas with olive oil or melted butter.
- Place the quesadillas on the prepared baking sheet and bake for 10-12 minutes, flipping halfway through, until they are golden and crispy on both sides.
- Remove from the oven and slice into wedges. Serve warm with sour cream and salsa for dipping, if desired.
Notes
- For a vegetarian version, omit the chicken and add extra veggies like spinach, zucchini, or corn.
- If you prefer extra crispy quesadillas, increase the baking time by 2-3 minutes.
- Experiment with different cheeses and fillings to customize the flavor.
