Description

Crispy and golden oven-baked quesadillas filled with melted cheese and your choice of fillings. A healthier alternative to frying, perfect for a quick and satisfying meal.


Ingredients

  • 4 flour tortillas
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1/2 cup cooked chicken, shredded (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tbsp olive oil or melted butter
  • Salt and pepper to taste
  • 1 tsp ground cumin (optional)
  • 1 tsp chili powder (optional)
  • 1/4 cup sour cream (for dipping, optional)
  • 1/4 cup salsa (for dipping, optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Lay the tortillas flat on a clean surface. Sprinkle the cheese evenly over half of each tortilla, then add the shredded chicken, bell peppers, onions, and spices (if using).
  3. Fold each tortilla in half to form a half-moon shape, pressing gently to secure the fillings inside.
  4. Brush both sides of the quesadillas with olive oil or melted butter.
  5. Place the quesadillas on the prepared baking sheet and bake for 10-12 minutes, flipping halfway through, until they are golden and crispy on both sides.
  6. Remove from the oven and slice into wedges. Serve warm with sour cream and salsa for dipping, if desired.

Notes

  • For a vegetarian version, omit the chicken and add extra veggies like spinach, zucchini, or corn.
  • If you prefer extra crispy quesadillas, increase the baking time by 2-3 minutes.
  • Experiment with different cheeses and fillings to customize the flavor.
