- 2 pounds Yukon Gold Potatoes, sliced into ½ inch thick rounds
- 5 tablespoons Unsalted Butter
- 2 tablespoons Olive Oil
- 4 Garlic Cloves, minced
- 2 tablespoons Fresh Parsley, chopped
- 1½ teaspoons Salt
- ½ teaspoon Black Pepper
Instructions
- Fill a large pot with salted water and bring it to a boil over medium-high heat.
- Add sliced potatoes and cook for 8 to 10 minutes until just tender. Drain and steam dry for 5 minutes.
- In a large skillet, heat olive oil and 3 tablespoons of butter over medium heat. Add garlic and sauté for 1 minute.
- Place potatoes in a single layer in the skillet. Cook undisturbed for 4 to 5 minutes until golden and crispy.
- Flip potatoes and cook the other side for another 4 to 5 minutes. Add remaining butter and coat potatoes evenly.
- Season with salt and pepper, sprinkle with parsley, and remove from heat.
- Serve hot and enjoy.

- Use waxy potatoes like Yukon Gold or red potatoes for best results.
- Let boiled potatoes dry before frying for maximum crispness.
- Top with cheese or herbs for extra flavor.
