A creamy twist on a classic, this Cottage Cheese Pizza combines a golden crust with a velvety cottage cheese base, fresh vegetables, and fragrant herbs for a light yet indulgent meal.


Ingredients

  • 1 medium pizza crust (about 12-inch), store-bought or homemade
  • 1 cup cottage cheese, preferably full-fat
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup tomato sauce
  • 1/4 cup thinly sliced red onion
  • 1/2 cup assorted bell peppers, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup fresh spinach leaves
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • A few fresh basil leaves, torn


Instructions

  1. Preheat oven to 425°F (220°C) and place a pizza stone or baking sheet inside to heat.
  2. Blend half the cottage cheese until smooth, then mix it with the remaining curds. Season with salt, pepper, and Italian seasoning.
  3. Lightly oil your baking sheet or stone if not preheating it.
  4. Spread tomato sauce over the crust, followed by the cottage cheese mixture. Add mozzarella, then layer onions, peppers, tomatoes, and spinach. Drizzle with olive oil.
  5. Bake for 12–15 minutes until the crust is golden and the cheese is bubbly.
  6. Sprinkle with fresh basil and a pinch of black pepper.
  7. Slice and serve immediately while hot and crisp.
