- 1 medium pizza crust (about 12-inch), store-bought or homemade
- 1 cup cottage cheese, preferably full-fat
- 1/2 cup shredded mozzarella cheese
- 1/3 cup tomato sauce
- 1/4 cup thinly sliced red onion
- 1/2 cup assorted bell peppers, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup fresh spinach leaves
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- A few fresh basil leaves, torn
Instructions
- Preheat oven to 425°F (220°C) and place a pizza stone or baking sheet inside to heat.
- Blend half the cottage cheese until smooth, then mix it with the remaining curds. Season with salt, pepper, and Italian seasoning.
- Lightly oil your baking sheet or stone if not preheating it.
- Spread tomato sauce over the crust, followed by the cottage cheese mixture. Add mozzarella, then layer onions, peppers, tomatoes, and spinach. Drizzle with olive oil.
- Bake for 12–15 minutes until the crust is golden and the cheese is bubbly.
- Sprinkle with fresh basil and a pinch of black pepper.
- Slice and serve immediately while hot and crisp.
