- 2 teaspoons vanilla extract
- 3 cups coffee ice cream, slightly softened
Instructions
- Preheat oven to 350 degrees F and line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
- Cream butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
- Gradually add dry ingredients to wet mixture until fully combined.
- Scoop tablespoon sized portions onto baking sheets, spacing 2 inches apart.
- Bake for 8 to 10 minutes, then cool completely on a wire rack.
- Scoop softened coffee ice cream onto the flat side of one cookie and top with another cookie.
- Wrap each sandwich and freeze for at least 2 hours before serving.
