Description

A flavorful and easy-to-make chicken scampi served over creamy garlic parmesan rice, combining tender chicken with a buttery garlic sauce and cheesy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 5 cloves garlic, minced, divided
  • 1/2 cup dry white wine or chicken broth
  • 1 lemon, juiced
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 cup long-grain white rice
  • 2 cups chicken broth (for rice)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste (for rice)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
  3. Add chicken and cook until golden and cooked through, about 5-6 minutes per side. Remove chicken and set aside.
  4. In the same skillet, add remaining butter and half the minced garlic; sauté until fragrant, about 1 minute.
  5. Add white wine (or chicken broth), lemon juice, and red pepper flakes; simmer for 2-3 minutes to reduce slightly.
  6. Return chicken to the skillet, spoon sauce over, and heat for 2 more minutes. Sprinkle with parsley.
  7. Meanwhile, rinse rice under cold water until water runs clear.
  8. In a saucepan, bring chicken broth to a boil. Add rice and half the remaining garlic, salt, and pepper.
  9. Reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender and liquid is absorbed.
  10. Remove from heat and stir in Parmesan cheese until melted and creamy.
  11. Serve chicken scampi over garlic parmesan rice and garnish with extra parsley if desired.

Notes

  • Use fresh lemon juice for best flavor.
  • White wine adds depth but can be substituted with chicken broth for a non-alcoholic version.
  • For extra richness, add a splash of cream to the sauce before serving.
