Description

Chicken roulade is a flavorful and elegant dish where chicken breasts are stuffed with a savory filling, rolled up, and baked to perfection.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup breadcrumbs (for coating)
  • 2 tablespoons olive oil (for searing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap or parchment paper and gently pound with a meat mallet until they are even in thickness (about 1/2 inch thick).
  3. In a bowl, mix together spinach, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, and pepper.
  4. Spread the filling evenly over the chicken breasts.
  5. Roll up each chicken breast tightly and secure with toothpicks.
  6. Coat the rolled chicken in breadcrumbs for a crispy outer layer.
  7. Heat olive oil in a large skillet over medium heat. Sear the chicken roulades for 2–3 minutes on each side until golden brown.
  8. Transfer the seared chicken to a baking dish and bake for 20–25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C).
  9. Remove toothpicks before serving. Slice and serve warm with your favorite sides.

Notes

  • Feel free to substitute the spinach with other vegetables like mushrooms or bell peppers.
  • If you prefer a lighter version, use low-fat cream cheese and skip the breadcrumbs.
  • Serve with a simple salad or roasted vegetables for a complete meal.
