- 4 large boneless skinless chicken breasts, about 2 pounds total, pounded to even thickness
- 8 thin slices deli ham, about 8 ounces total
- 8 slices Swiss cheese, about 8 ounces total
- 1 cup all purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs, plain or lightly seasoned
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- Olive oil spray, light coating
Instructions
- Preheat oven to 375 degrees Fahrenheit and lightly grease a baking dish.
- Place flour in one shallow bowl, beaten eggs in another, and breadcrumbs mixed with salt, pepper, and garlic powder in a third bowl.
- Pound chicken breasts to about half an inch thickness and lay flat.
- Place two slices of ham and two slices of Swiss cheese on each chicken breast. Roll tightly and secure with toothpicks.
- Dredge each roll in flour, dip in beaten eggs, then coat evenly with breadcrumb mixture.
- Arrange in prepared baking dish and lightly spray tops with olive oil.
- Bake for 30 to 35 minutes until golden brown and internal temperature reaches 165 degrees Fahrenheit.
- Let rest for 5 minutes, remove toothpicks, slice, and serve warm.

- Chill rolled chicken for 15 minutes before breading to help maintain shape.
