- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 cup buttermilk (for marinating)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup all-purpose flour (for coating)
- 1/2 cup cornstarch
- Vegetable oil, for frying
Instructions
- In a bowl, combine chicken pieces, buttermilk, salt, pepper, paprika, garlic powder, and onion powder. Mix well and marinate for at least 30 minutes (or overnight for best flavor).
- In another bowl, combine flour and cornstarch.
- Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
- Remove chicken from marinade, letting excess drip off. Dredge in the flour-cornstarch mixture until fully coated.
- Fry chicken bites in batches for 4–5 minutes or until golden brown and fully cooked. Do not overcrowd the pan.
- Remove and drain on paper towels. Serve hot with dipping sauce of choice (ranch, honey mustard, BBQ, etc.).
Notes
- For a healthier option, bake at 400°F (200°C) for 20–25 minutes, flipping halfway through, or air fry at 375°F (190°C) for 12–15 minutes.
- Double dredge the chicken for an extra crispy coating.
- Add chili powder or cayenne for a spicy kick.
