Potatoes
- 4 medium russet or Yukon gold potatoes
Ground Meat
- 1 lb ground beef or turkey
Taco Seasoning
- 1 packet taco seasoning
Cheese
- 2 cups shredded cheddar cheese
Toppings
- 1 cup sour cream
- 1/2 cup chopped green onions
- 1/2 cup sliced olives (optional)
Instructions
- Prepare the Potatoes: Preheat your oven to 400°F (200°C). Wash, peel, and dice the potatoes into bite-sized cubes. Place them in a bowl, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.
- Roast the Potatoes: Spread the potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until they are golden brown and crispy, stirring halfway through for even cooking.
- Cook the Meat: While the potatoes are roasting, heat a skillet over medium heat. Add the ground beef or turkey, breaking it up with a spoon. Cook until browned, then stir in the taco seasoning and a splash of water. Let it simmer for a few minutes until the sauce thickens.
- Combine: Once the potatoes are done roasting, remove them from the oven and lower the temperature to 350°F (175°C). In a large baking dish, combine the roasted potatoes with the seasoned meat. Mix well to ensure each potato is coated.
- Add Cheese and Bake: Sprinkle shredded cheddar cheese generously over the potato and meat mixture. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is fully melted and bubbly.
Notes
- Cutting the potatoes into uniform sizes ensures even cooking.
- Roasting the potatoes first gives them a wonderful texture.
- Feel free to add your favorite spices to the meat for an extra flavor boost.
- Prepare the potatoes and meat in advance for a quick weeknight dinner.
- If you have one, use a cast iron skillet as it retains heat well and promotes even cooking.
