Description

Soft, lightly crisp Japanese-style biscuits with a buttery crumb and gentle cheesy flavor, finished with a subtle shine that makes them perfect for tea time or gifting.

Ingredients

  • Unsalted butter, 120 g, softened
  • Powdered sugar, 60 g
  • Egg yolk, 1 large
  • All-purpose flour, 180 g
  • Grated cheddar cheese, 80 g
  • Milk, 2 tablespoons
  • Salt, 1/4 teaspoon

Instructions

  1. Preheat the oven to 170 C and line a baking tray with parchment paper.
  2. In a mixing bowl, cream the softened butter and powdered sugar until smooth and pale.
  3. Add the egg yolk and mix until fully combined.
  4. Stir in the grated cheddar cheese, milk, and salt until evenly distributed.
  5. Gently fold in the flour until a soft dough forms, avoiding overmixing.
  6. Shape the dough into small biscuits and place them evenly spaced on the prepared tray.
  7. Bake for 18 minutes until lightly golden with a soft shine.
  8. Remove from the oven, allow to cool slightly, then serve or store.

Notes

  • Use finely grated cheese for a smoother texture.
  • Chill the dough briefly if it feels too soft to shape.
  • Store baked biscuits in an airtight container for up to five days.
