Description

A comforting, protein-packed Cheesy Protein Egg Bake featuring fluffy eggs, creamy cottage cheese, and golden melted cheddar. Perfect for breakfast, brunch, or meal prep.


Ingredients

  • 1 cup cottage cheese
  • 1 ½ cups shredded cheddar cheese
  • ½ cup milk
  • 1 cup chopped spinach (fresh or frozen)
  • 1 medium bell pepper, diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil or butter (for greasing)


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil or butter.
  2. In a large mixing bowl, whisk the eggs until smooth. Add milk, cottage cheese, salt, and pepper.
  3. Fold in the chopped spinach, diced bell pepper, and shredded cheddar cheese.
  4. Pour the mixture evenly into the prepared baking dish.
