Description

These Cheesy Garlic Butter Rolls are soft, fluffy, and packed with roasted garlic flavor and melty mozzarella cheese. Made with homemade dough and rich garlic butter, they’re perfect as a side, appetizer, or indulgent snack.

  • Garlic Butter:
  • 1 garlic head
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter
  • 1 tablespoon fresh parsley, chopped
  • Dough:
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter
  • 2 egg yolks
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • Filling:
  • 200 grams mozzarella cheese
  • Prepared garlic butter (from above)
  • Egg Wash:
  • 1 egg

Instructions

  1. Roast the Garlic: Cut the top off a garlic head, place in a ramekin, drizzle with olive oil, sprinkle with salt, cover with foil, and roast at 160°C (320°F) for 2 hours until soft.
  2. Make Garlic Butter: Mash the roasted garlic and mix with softened butter, chopped parsley, and 2 tablespoons of garlic-infused oil. Set aside.
  3. Activate Yeast: In a bowl, combine warm milk, yeast, and honey. Let proof for 10 minutes until frothy.
  4. Prepare Dough: In a mixing bowl, combine flours, sugar, milk powder, softened butter, salt, egg yolks, and the yeast mixture. Mix until combined.
  5. Knead: Knead the dough using a stand mixer with a dough hook for 15–20 minutes until smooth and elastic.
  6. First Proof: Place dough in a greased bowl, cover, and proof in a warm place (29°C/85°F) for about 1.5 hours or until doubled in size.
  7. Roll Out: Roll the dough into a rectangle about 1/4 cm (1/8 inch) thick.
  8. Add Filling: Spread prepared garlic butter over the dough, then sprinkle evenly with mozzarella cheese.
  9. Shape Rolls: Roll the dough tightly into a log and cut into 6 equal portions using a knife or unflavored dental floss.
  10. Second Proof: Arrange rolls on a baking sheet, cover, and proof again for 30 minutes until puffy.
  11. Bake: Preheat oven to 175°C (350°F). Brush rolls with egg wash and bake for 20–25 minutes, checking at 20 minutes.
  12. Finish: Brush freshly baked rolls with remaining garlic butter and garnish with chopped parsley. Serve warm.

Notes

  • You can prepare the garlic butter ahead and refrigerate until ready to use.
  • If you prefer a sweeter bread, increase the honey slightly.
  • Use a silicone baking mat or parchment for easier cleanup.
