Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 3 cloves garlic, minced
- 4 tbsp unsalted butter, divided
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven: Set oven to 375°F (190°C).
- Prepare filling: In a skillet, melt 2 tbsp butter over medium heat. Add garlic and mushrooms, sauté until mushrooms are soft and moisture evaporates. Stir in thyme, salt, and pepper. Remove from heat and let cool slightly. Mix in mozzarella and Parmesan cheese.
- Prepare chicken: Cut a pocket horizontally into each chicken breast without cutting all the way through.
- Stuff chicken: Spoon mushroom and cheese mixture into each pocket, securing with toothpicks if needed.
- Sear chicken: Heat olive oil and remaining 2 tbsp butter in an oven-safe skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side until golden brown.
- Bake: Transfer skillet to oven and bake for 20-25 minutes, or until chicken is cooked through and cheese is melted.
- Serve: Garnish with fresh parsley and serve hot.
Notes
- Use cream cheese in the filling for an even creamier texture.
- Try adding spinach or sun-dried tomatoes to the stuffing for extra flavor.
- Remove toothpicks before serving to avoid accidents.
