Description

Ingredients

  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all purpose flour
  • 1 cup whole milk, warmed
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg


Instructions

  1. Heat a large skillet over medium heat.
  2. Melt the butter, add the minced garlic, and sauté for about 30 seconds until fragrant.
  3. Sprinkle in the flour and whisk continuously for 1 minute to create a smooth paste.
  4. Slowly pour in the warmed milk while whisking, then add the heavy cream. Cook for 3 to 4 minutes until the sauce thickens.
  5. Add the cream cheese, shredded mozzarella, and grated Parmesan. Stir until fully melted and smooth.
  6. Add the chopped spinach in batches, stirring until wilted and evenly coated in the sauce.
  7. Season with salt, black pepper, and ground nutmeg. Let simmer gently for 2 to 3 minutes until thick and creamy.

Notes

  • Be sure to squeeze excess moisture from spinach if using frozen.
  • Use freshly grated cheese for smoother melting.
  • If the sauce becomes too thick, add a small splash of warm milk to loosen it.
