- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons all purpose flour
- 1 cup whole milk, warmed
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground nutmeg
Instructions
- Heat a large skillet over medium heat.
- Melt the butter, add the minced garlic, and sauté for about 30 seconds until fragrant.
- Sprinkle in the flour and whisk continuously for 1 minute to create a smooth paste.
- Slowly pour in the warmed milk while whisking, then add the heavy cream. Cook for 3 to 4 minutes until the sauce thickens.
- Add the cream cheese, shredded mozzarella, and grated Parmesan. Stir until fully melted and smooth.
- Add the chopped spinach in batches, stirring until wilted and evenly coated in the sauce.
- Season with salt, black pepper, and ground nutmeg. Let simmer gently for 2 to 3 minutes until thick and creamy.
- Serve warm and enjoy.
Notes
- Be sure to squeeze excess moisture from spinach if using frozen.
- Use freshly grated cheese for smoother melting.
- If the sauce becomes too thick, add a small splash of warm milk to loosen it.
