- 12 large mushroom caps, cleaned and stems removed
- 1 lb shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1/4 cup cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped green onions
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, toss the shrimp with Cajun seasoning, olive oil, and a pinch of salt and pepper. Sauté the shrimp in a hot pan over medium heat for 2-3 minutes per side until cooked through, then chop into small pieces.
- In a separate bowl, combine the cream cheese, mozzarella, Parmesan, garlic, green onions, lemon juice, and chopped shrimp. Mix until well combined.
- Stuff the mushroom caps with the shrimp and cheese mixture and place them on a baking sheet.
- Bake for 15-20 minutes, until the cheese is melted and bubbly and the mushrooms are tender.

- For an extra kick, you can add some chopped jalapeños to the stuffing mixture.
