- 1 cup granulated sugar (divided)
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 cups blueberries (fresh or frozen)
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 4 large egg yolks
- 1 tablespoon cornstarch
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, combine softened butter, 1/2 cup sugar, flour, and salt until crumbly.
- Press the crust mixture evenly into the prepared pan and bake for 18–20 minutes until lightly golden.
- Meanwhile, blend blueberries and lemon juice, then strain through a fine mesh sieve into a saucepan.
- Add remaining 1/2 cup sugar, cornstarch, egg yolks, and lemon zest to the saucepan. Whisk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Pour the warm blueberry curd over the baked crust and spread evenly.
- Bake again for 10–12 minutes, then cool completely before refrigerating for at least 2 hours.
- Dust with powdered sugar before slicing and serving.
