Description

  • 1 cup old-fashioned oats
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ cup brown sugar
  • 1 cup milk
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 ½ cups blackberries (fresh or frozen)
  • 2 tablespoons honey or maple syrup


Instructions

  1. Preheat oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
  2. In a bowl, mix flour, oats, baking powder, salt, and cinnamon.
  3. In another bowl, whisk milk, egg, melted butter, vanilla, and brown sugar until smooth.
  4. Pour wet mixture into dry ingredients and stir until just combined.
  5. Fold in half of the blackberries gently.
  6. Divide batter into muffin cups and swirl in the remaining blackberries mixed with honey.
  7. Bake for 18–20 minutes until golden and firm to the touch.
  8. Cool for 5 minutes in the pan, then transfer to a rack.
  9. Serve warm with butter or honey.
