- 1 ½ teaspoons ground cinnamon
- ½ cup brown sugar
- 1 cup milk
- 1 large egg
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 ½ cups blackberries (fresh or frozen)
- 2 tablespoons honey or maple syrup
Instructions
- Preheat oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
- In a bowl, mix flour, oats, baking powder, salt, and cinnamon.
- In another bowl, whisk milk, egg, melted butter, vanilla, and brown sugar until smooth.
- Pour wet mixture into dry ingredients and stir until just combined.
- Fold in half of the blackberries gently.
- Divide batter into muffin cups and swirl in the remaining blackberries mixed with honey.
- Bake for 18–20 minutes until golden and firm to the touch.
- Cool for 5 minutes in the pan, then transfer to a rack.
- Serve warm with butter or honey.
