Description

Bitchin’ Biscuits & Gravy is a hearty breakfast classic that features flaky, buttery biscuits topped with rich sausage gravy, offering a comforting and satisfying meal perfect for any morning.

Ingredients

Units Scale

For the Biscuits:

  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted Butter, cold
  • 3/4 cup Milk

For the Gravy:

  • 1 pound Breakfast Sausage
  • 1/4 cup All-Purpose Flour
  • 1 cup Milk
  • 1 cup Heavy Cream
  • 1/2 teaspoon Black Pepper

Instructions

  1. Make the Biscuits: Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually stir in the milk until just combined. Turn the dough onto a floured surface and knead gently just a few times. Roll out and cut into biscuits.
  2. Bake the Biscuits: Place the biscuits on a baking sheet lined with parchment paper. Bake for about 12-15 minutes, or until they are golden brown. Remove from the oven and set aside, keeping them warm.
  3. Prepare the Gravy: In a skillet over medium heat, cook the breakfast sausage until browned, breaking it into small pieces. Once cooked, sprinkle flour over the sausage and stir well to incorporate. Gradually add milk and heavy cream, stirring continuously until the gravy thickens. Season with salt and freshly cracked black pepper to taste.

Notes

  • Chill the Ingredients: Keeping your butter and milk cold helps ensure flaky biscuits.
  • Don’t Overwork the Dough: Mix just until combined to keep your biscuits tender.
  • Use a Cast Iron Skillet: It retains heat well, giving your biscuits a nice crust.
  • Adjust Gravy Consistency: Add more milk for a thinner gravy or let it cook longer for a thicker texture.
  • Season Generously: Don’t be shy with spices; they make all the difference in flavor!
