Description

These Big Mac Bombs are mini burger bites stuffed with seasoned beef, melty cheese, and tangy pickles, all wrapped in soft dinner rolls and baked to golden perfection. A fun, handheld twist on the classic Big Mac, perfect for parties or a family dinner!


Ingredients

  • 1 pound ground beef
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup finely minced or grated white onion
  • 1/3 cup chopped dill pickles
  • 1/2 pound block of American cheese
  • 1 package of 24 frozen dinner rolls (thawed)
  • 1 large egg, beaten
  • Sesame seeds, for garnish

Instructions

  1. Thaw roll dough according to package instructions.
  2. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper and set aside.
  3. In a large bowl, mix together ground beef, onion powder, garlic salt, salt, black pepper, minced onion, and chopped pickles.
  4. Divide the meat mixture into 24 equal portions. Slice cheese into 24 small cubes (about ½-inch).
  5. Flatten each meat portion into a small circle, place a cheese cube in the center, and form a meatball around the cheese.
  6. Quickly brown the meatballs in a skillet on all sides (do not cook through). Toss gently to help maintain shape and prevent cheese from leaking.
  7. Flatten each thawed dinner roll into a circle slightly larger than the meatball. Wrap dough around each meatball and seal the bottom.
  8. Place each dough-wrapped ball seam-side down on the prepared baking sheet.
  9. Brush the tops and sides with beaten egg and sprinkle with sesame seeds.
  10. Bake for 18–20 minutes, or until golden brown.
  11. Serve warm with Big Mac sauce or your favorite dipping sauce.

  • Use freshly grated onion for better moisture and flavor infusion.
  • Don’t overcook the beef during the browning step—this ensures juicy centers.
  • For a spicier version, add jalapeños or pepper jack cheese.
