Description
A nostalgic diner-style dessert featuring fresh strawberries in a glossy strawberry glaze, nestled in a flaky pie crust and topped with whipped cream.
Ingredients
Scale
- 1 pre-baked 9-inch pie crust, cooled
- 5 cups fresh strawberries, hulled and halved
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1 cup water
- 1 small box (3 ounces) strawberry gelatin
- Whipped cream, for topping
Instructions
- Ensure your pie crust is baked, cooled, and ready to use.
- In a saucepan, combine sugar, cornstarch, and water. Stir constantly over medium heat until thick and clear, then remove from heat and stir in the gelatin. Let cool slightly.
- Arrange strawberries neatly in the cooled crust.
- Pour the cooled glaze over the strawberries, coating each berry.
- Refrigerate the pie for 2–3 hours until set.
- Whip fresh cream just before serving and top the pie generously.
- Slice, serve chilled, and enjoy.
Notes
- Use firm, ripe strawberries for best results.
- Let glaze cool slightly before pouring to avoid softening the berries.
- Store in the fridge, loosely covered, and enjoy within 2 days.
- Do not freeze, as strawberries will lose their texture.
