Description

This rustic tomato tart combines flaky puff pastry, juicy heirloom tomatoes, creamy goat cheese, and fresh thyme into a stunning, easy-to-make dish that’s perfect for any occasion.


Ingredients

  • 1 sheet puff pastry, thawed
  • 34 medium heirloom tomatoes, sliced
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg yolk + 1 tablespoon water (for egg wash)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix the egg yolk and water for the egg wash. Slice tomatoes and blot with paper towels.
  3. Roll out puff pastry on a floured surface and transfer to baking sheet. Score a 1-inch border around the edges.
  4. Spread goat cheese within the border. Arrange tomato slices over cheese, slightly overlapping. Drizzle with olive oil and sprinkle with thyme, salt, and pepper.
  5. Brush pastry edges with egg wash. Bake for 25–30 minutes until golden and crisp.
  6. Let tart cool slightly. Garnish with extra thyme or olive oil if desired. Slice and serve warm or at room temperature.

Notes

  • Use very ripe tomatoes for the best flavor and blot to remove excess moisture.
  • Chilling the pastry before baking can improve flakiness.
