This rustic tomato tart combines flaky puff pastry, juicy heirloom tomatoes, creamy goat cheese, and fresh thyme into a stunning, easy-to-make dish that’s perfect for any occasion.

- 1 sheet puff pastry, thawed
- 3–4 medium heirloom tomatoes, sliced
- 4 ounces goat cheese, crumbled
- 1 tablespoon fresh thyme leaves
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 egg yolk + 1 tablespoon water (for egg wash)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix the egg yolk and water for the egg wash. Slice tomatoes and blot with paper towels.
- Roll out puff pastry on a floured surface and transfer to baking sheet. Score a 1-inch border around the edges.
- Spread goat cheese within the border. Arrange tomato slices over cheese, slightly overlapping. Drizzle with olive oil and sprinkle with thyme, salt, and pepper.
- Brush pastry edges with egg wash. Bake for 25–30 minutes until golden and crisp.
- Let tart cool slightly. Garnish with extra thyme or olive oil if desired. Slice and serve warm or at room temperature.
Notes
- Use very ripe tomatoes for the best flavor and blot to remove excess moisture.
- Chilling the pastry before baking can improve flakiness.
- Reheat leftovers in the oven to keep the crust crisp.
