- 1 and 1/2 cups all purpose flour
- 3 medium ripe bananas, mashed
- 1 cup cottage cheese
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 4 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F and lightly grease a 9×5 inch loaf pan.
- Whisk together the mashed bananas, cottage cheese, eggs, melted butter, granulated sugar, brown sugar, and vanilla until smooth.
- Prepare the loaf pan with parchment or nonstick spray.
- Add the dry ingredients to the wet mixture and fold gently until just combined.
- Pour the batter into the pan and bake for 50 to 60 minutes until a toothpick comes out clean.
- Cool the bread for 10 minutes in the pan before transferring it to a rack.
- Slice and serve warm or at room temperature.
Notes
- Use very ripe bananas for the richest flavor.
- If the top browns too quickly, tent with foil during the last part of baking.
- The bread tastes even better the next day.
