Description

A moist and tender banana bread enriched with creamy cottage cheese for a naturally sweet, protein-boosted loaf perfect for breakfast or snacking.


Ingredients

  • 1 and 1/2 cups all purpose flour
  • 3 medium ripe bananas, mashed
  • 1 cup cottage cheese
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F and lightly grease a 9×5 inch loaf pan.
  2. Whisk together the mashed bananas, cottage cheese, eggs, melted butter, granulated sugar, brown sugar, and vanilla until smooth.
  3. Prepare the loaf pan with parchment or nonstick spray.
  4. Add the dry ingredients to the wet mixture and fold gently until just combined.
  5. Pour the batter into the pan and bake for 50 to 60 minutes until a toothpick comes out clean.
  6. Cool the bread for 10 minutes in the pan before transferring it to a rack.
  7. Slice and serve warm or at room temperature.

Notes

  • Use very ripe bananas for the richest flavor.
  • If the top browns too quickly, tent with foil during the last part of baking.
  • The bread tastes even better the next day.
