- 4 boneless, skinless chicken breasts

- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons red wine vinegar
- 1 teaspoon honey or maple syrup (optional)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Season chicken breasts with salt, pepper, and dried oregano. Place them in the baking dish.
- Sprinkle crumbled feta evenly over each chicken breast.
- Bake for 25-30 minutes or until chicken is cooked through and feta is golden and crispy.
- While chicken bakes, prepare the vinaigrette by whisking together olive oil, lemon juice, red wine vinegar, honey (if using), salt, and pepper.
- In a bowl, combine cherry tomatoes, red onion, and parsley.
- Once chicken is done, drizzle vinaigrette over the chicken and top with the tomato mixture.
