Description

Ingredients

  • 1 cup fresh breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, gently combine ground chicken, fresh breadcrumbs, egg, minced garlic, grated parmesan, chopped parsley, milk, salt, black pepper, and olive oil until just mixed.
  3. Shape the mixture into evenly sized meatballs, about 1 1/2 inches each, and place them slightly spaced apart on the prepared baking sheet.
  4. Bake for 18 to 22 minutes, or until golden brown and the internal temperature reaches 165°F.
  5. Remove from the oven and let rest for a few minutes before serving. Garnish with additional parsley or parmesan if desired.
