Description

Crispy toasted bread topped with a flavorful blend of marinated artichokes, ripe tomatoes, garlic, and fresh herbs. This Artichoke Bruschetta is bright, savory, and perfect as an appetizer or light meal.


Ingredients

  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste
  • 1 loaf baguette or ciabatta bread, sliced and toasted
  • 2 tablespoons Parmesan cheese (optional), grated


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine chopped artichoke hearts, diced tomatoes, garlic, basil, olive oil, lemon juice, salt, and pepper. Stir to mix evenly.
  3. Arrange the bread slices on the baking sheet and brush lightly with olive oil.
  4. Toast the bread for 6–8 minutes, until golden and crisp.
  5. Remove from the oven and let cool slightly, then spoon the artichoke mixture over each slice.
  6. Sprinkle with Parmesan cheese if desired, drizzle with a little extra olive oil, and serve immediately.
