- 1 cup unsweetened applesauce
- 1/2 cup pure maple syrup or honey
- 1/4 cup avocado oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts or raisins (optional)
Cinnamon Cream Cheese Frosting:
- 8 oz full-fat cream cheese, softened to room temperature
- 1/2 cup plain full-fat Greek yogurt
- 1/4 cup maple syrup
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350°F. Grease or line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, stir together the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, whisk together the applesauce, maple syrup (or honey), oil, eggs, and vanilla extract until smooth.
- Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.
- Fold in chopped nuts or raisins if using.
- Pour the batter into the prepared baking pan and spread evenly. Bake for 22–27 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- While the cake cools, make the frosting: In a mixing bowl, whip the cream cheese, Greek yogurt, maple syrup, vanilla extract, and cinnamon with a hand or stand mixer for about 5 minutes, until smooth and fluffy.
- Once the cake is fully cooled, spread the frosting over the top. Cut into squares and serve.
Notes
- For a gluten-free version, use a 1:1 gluten-free flour blend.
- If your frosting is runny, continue whipping—it thickens as it incorporates more air.
- This cake stores well in the fridge for up to 5 days.
