- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 1/4 cups milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 2 tablespoons sugar
- 2 medium apples, peeled and finely diced
- Oil or butter for cooking, as needed
Instructions
- Preheat your skillet or griddle over medium heat so it’s ready when the batter is mixed.
- In a mixing bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, mix the milk, egg, melted butter, vanilla, and sugar.
- Fold wet ingredients into the dry ingredients until just combined, then stir in diced apples.
- Lightly grease the skillet with oil or butter and pour 1/4 cup of batter per pancake onto the skillet.
- Cook until bubbles form and the edges set, about 2–3 minutes, then flip and cook another 1–2 minutes until golden brown.
- Repeat with remaining batter, adding more butter or oil as needed between batches.
- Serve warm with maple syrup, whipped cream, or sautéed apple slices.
Notes
- Let the batter rest for 5–10 minutes before cooking for extra fluffiness.
- Use tart apples like Granny Smith or Honeycrisp for the best flavor.
- To keep pancakes warm, store cooked pancakes in a 200°F oven until ready to serve.
