Description

Fluffy, golden pancakes filled with tender apple chunks and warm cinnamon spice. These apple pancakes are the perfect cozy breakfast treat for any day of the week.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 2 medium apples, peeled and finely diced
  • Oil or butter for cooking, as needed


Instructions

  1. Preheat your skillet or griddle over medium heat so it’s ready when the batter is mixed.
  2. In a mixing bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix the milk, egg, melted butter, vanilla, and sugar.
  4. Fold wet ingredients into the dry ingredients until just combined, then stir in diced apples.
  5. Lightly grease the skillet with oil or butter and pour 1/4 cup of batter per pancake onto the skillet.
  6. Cook until bubbles form and the edges set, about 2–3 minutes, then flip and cook another 1–2 minutes until golden brown.
  7. Repeat with remaining batter, adding more butter or oil as needed between batches.
  8. Serve warm with maple syrup, whipped cream, or sautéed apple slices.

Notes

  • Let the batter rest for 5–10 minutes before cooking for extra fluffiness.
  • Use tart apples like Granny Smith or Honeycrisp for the best flavor.
  • To keep pancakes warm, store cooked pancakes in a 200°F oven until ready to serve.
