Description
Apple Mille-Feuille is a French-inspired dessert featuring delicate layers of crispy puff pastry, silky vanilla custard, and caramelized apples. It’s an elegant yet comforting treat that beautifully balances lightness and richness in every bite.
Ingredients
- Puff Pastry Sheets: 2 sheets, thawed
- Apples: 3 medium (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
- Butter: 2 tablespoons
- Brown Sugar: 3 tablespoons
- Vanilla Extract: 1 teaspoon
- Milk: 2 cups
- Egg Yolks: 4 large
- Cornstarch: 3 tablespoons
- Granulated Sugar: 1/2 cup
- Salt: a pinch
- Powdered Sugar: for dusting
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together egg yolks, sugar, cornstarch, and milk in a saucepan. Cook over medium heat until thickened, then stir in vanilla extract and let cool.
- Roll out the puff pastry slightly, prick it with a fork, and bake for 15–20 minutes until golden brown.
- Meanwhile, sauté the apple slices with butter and brown sugar until caramelized and tender.
- Once cooled, layer pastry, custard, and apples alternately to create the Mille-Feuille.
- Dust with powdered sugar and chill for 30 minutes before serving.
Notes
- Use firm apples like Granny Smith for the best texture.
- Let the custard cool completely before layering to prevent sogginess.
- Assemble just before serving for maximum crispness.
- Refrigerate leftovers for up to 2 days.
