- 700 g (25 oz) stoned black cherries
- 400 g (2 cups) white sugar (granulated or caster)
- 8 teaspoon lemon juice
- 1 teaspoon vanilla extract or paste
- 4 teaspoon Amaretto almond liqueur
- 1 teaspoon butter (optional)
Instructions
- Sterilise jars to hold 680g of jam and set aside.
- Roughly chop the cherries and place in a medium heavy-based pan along with sugar and lemon juice.
- Cook over moderate heat, stirring frequently, until sugar dissolves and fruit softens (about 10-15 minutes).
- Optional: pulse briefly with a stick blender to slightly break up fruit, leaving texture and chunks.
- Add the Amaretto and vanilla extract, stirring to combine.
- Return the pan to medium-high heat and boil, checking the temperature regularly until it reaches 105°C / 221°F (about 10 minutes).
- Remove from heat, stir in butter (if using), and let sit for 10 minutes.
- Pour into sterilised jars, add a disc of wax paper if desired, and seal immediately.
- Turn jars upside down and let cool completely before labelling.
- Store in a cool place for up to 12 months. Once opened, refrigerate and consume within 3 weeks.
Notes
- Do not over-process the fruit if blending; maintain some chunky texture.
- Amaretto adds a beautiful almond note but can be omitted for a non-alcoholic version.
- Butter helps reduce foam but is optional.
- Always use sterilised jars for proper preservation and food safety.
